1 3 lb frying chicken cut up
1/3 c Wesson oil
1 onion chopped
1 clove of garlic crushed
1 4 oz can sliced mushrooms drained
1 28 oz can Hunts whole peeled tomatoes
1 tsp salt
1 tsp basil
1/2 tsp oregano
1/8 tsp pepper
1 bay leaf
1/4 c dry white wine

Directions:
Directions:
Brown chicken in oil in a large skillet. Remove chicken, add onion, garlic and mushrooms. Cook until tender. Return chicken to skillet. combine Hunts tomatoes, salt, basil oregano, pepper & bay leaf and pour over chicken. Cover and simmer 45 minutes. Add wine, simmer 15 minutes longer. Remove bay leaf. Thicken sauce if desired.
