2 c. zucchini, peel and grated
3 eggs
1 c. vegetable oil
2 tsp. vanilla
2 c. sugar
3 c. flour
1 tsp. salt
1/4 tsp. baking soda
3 tsp. cinnamon
1 c. chopped nuts

Directions:

Mix all ingredients well. Pour into greased loaf pan, 1 large or 2 small. Bake at 350 for 1 hour.
