Here is what your gonna need:
1 1/3 cups sugar
2/3 cup soft margarine
4 eggs
2 Tablespoons baking powder (yes, this is correct)
¼ tsp. salt
1 tsp. butter flavoring extract
1 tsp. rum flavoring extract
2 cups milk
4 cups flour
12 oz. bag butterscotch chips
½ Cup of Rock Sugar
Directions:
Directions:
Cream sugar, margarine and eggs together then, add baking powder, salt, and flavorings then add alternately the milk and flour. Stir in butterscotch chips. Put in greased muffin pans or cupcake papers and sprinkle with rock sugar. Bake 375 degrees for 25 minutes.
This recipe delivers 12 Texas-size muffins.

Last summer my wife and I vacationed at a friends home in the Mountains of western North Carolina, outside of the town of Brevard. Every Morning, I would travel through the Blue Ridge Mountains into town to pick up some fresh muffins from the local bakery. My wife wanted the blueberry or the lemon poppy, but I had stumbled upon the most amazing muffins I have ever had. Now I am not a huge fan of muffins, generally speaking, however these muffins were so sweet and so tasty; I had to almost beg the baker for his recipe. Although I promised never to share this recipe with anyone, I will never see that guy again, so screw him.
