5-6 med. sweet potatoes - peeled and cubed
1/4 c. maple syrup
fresh thyme or 2 tsp. dry
pinch cayenne pepper
1 c. cream
1/8 tsp. nutmeg
1 med. onion
1 tsp. curry powder
3 Tbsp butter
9 c. chicken stock (I like Minor's)
Directions:
Directions:
Boil sweet potatoes in chicken stock until tender. Saute onion in butter and add curry powder. Puree the sweet potato and onion mixture - put into a pot and add syrup, cream, salt, pepper, and thyme. Stir. Can serve immediately or simmer.
