3/4 c. olive tapenade
1 c. extra virgin olive oil
2 tsp. fresh chopped thyme leaves (or 1 tsp. dry)
2 tsp. freshly ground black pepper
1 tsp. hot red pepper flakes
4 to 5 lbs. chicken pieces (skin removed)
2 garlic cloves, peeled and thinly sliced
Salt and freshly ground black pepper

Directions:

Preheat the grill or broiler.

In a large mixing bowl, mix 1/2 c. of the tapenade, 3/4 c. of the oil, the thyme, peper and red pepper flakes until well blended. Add chicken and toss to coat.

Grill chicken until cooked through. Serve with additional tapenade.
