1/3 cup butter
1 cup onion, chopped
1 cup celery, chopped
1 cup carrots, chopped
¼ - ½ cup plain flour
2 cups chicken broth
1 cup milk
Salt and pepper, to taste
2 - 4 cups chicken, cooked, diced or shredded
Pie pastry

1½ cups plain flour
½ teaspoon salt
7 tablespoons Crisco shortening
4 - 5 tablespoons cold water

Sauté onion, celery and carrots in butter until tender. (May pre-cook in microwave with a little water for about 7 seven minutes on High; then add butter, to speed up process). Stir in flour until blended, then broth and milk. Cook over medium heat until mixture thickens. Season and add chicken. Pour into buttered 9X13-inch shallow baking dish.

Mix flour and salt, cut in shortening. Add water until consistency to work dough; roll ¼-inch thick. Roll out larger than baking dish. Fold pastry in half and lift to cover chicken mixture in dish. Fold excess dough under edges and crimp. Perforate top with fork. Brush top with milk. Bake 30 minutes at 400º until golden brown.
