1/2 c shortening
1 c firmly packed light brown sugar
1 egg
1/2 c chopped raisins
1/2 c broken pecans
2 c sifted all purpose flour
1/2 tsp salt
1/2 tsp banking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 c strong cold coffee
1 tsp vanilla
1 c finely chopped raw apples

Directions:
Directions:
Cream shortening and brown sugar until light and fluffy. Add egg and beat well. Stir in raisins and pecans. Mix and sift flour, salt, baking soda and spices; add coffee and vanilla. Stir in apples. Fill well greased muffin tins 2/3 full. Bake at 350º for 30 minutes. Makes 10-12 cup cakes.
