3 large, over ripe bananas
2/3-1 cup sugar
-1/3 cup butter, softened
1 egg, plus 1 egg white, beaten
2 tablespoons milk
1 cups all-purpose flour
teaspoon soda
teaspoons baking powder
teaspoon salt
cup pecans, chopped
teaspoon vanilla

Mash bananas with fork. Stir sugar and butter until well blended; add mashed bananas, butter mixture, milk and eggs. Mix dry ingredients. Add banana mixture to dry ingredients. Add vanilla and nuts. Do not beat. Pour into greased 9 x 5 loaf pan. Bake at 350 for 50 minutes. Test for doneness with toothpick.
Convection oven: 325 degrees for 30-40 minutes.
