1 Pet Ritz frozen pie crust
1 lg. box of chocolate or lemon pudding mix, NOT INSTANT
3 c. milk
3 egg whites
little bit of sugar

Directions:
Directions:
Bake the pie crust, according to package directions, until lightly browned. Use a wire whisk to mix the pudding mix and milk. Put in a microwavable bowl and cover. Microwave until thick. Pour into baked pie shell. Beat egg whites with sugar until stiff peaks form. Spread over the top of the pudding mixture. Be sure you completely cover the pudding. Bake at 325º until lightly browned. If you are using the lemon pudding, add a little lemon juice (less than the juice of a whole lemon) to the pudding.

Mother (Elizabeth Rushton) always brought these to the Rushton Reunions. She had to make one of each at home, because half of the family wanted the chocolate and the other half wanted the lemon.
