2 chicken breasts, cooked and cubed
olive oil
1 medium onion
1 garlic clove, peeled and diced
1 14 oz. can chopped tomatoes
1 small can green chiles, diced
3 carrots, peeled and diced
1 can ranch style pinto beans
1 can cream of chicken soup
6 15 oz. cans chicken broth
1/4 pkg (to taste) dried taco or fajita seasoning mix
3 T. lime juice
chopped cilantro

Directions:

Heat 3 T. olive oil in 3 qt. pot. Saute onions, garlic and carrots over medium heat until onions are soft (about 10 minutes). Add diced chicken and toss around for another minute or so. Add chicken broth, chicken soup, beans and seasoning pack.

Let simmer for 20 minutes. Add lime juice and cilantro and simmer another 5 minutes.

Serve in individual bowls and top with a dollop of sour cream, shredded cheese and tortilla chips.
