6 checken pieces (thighs, drumsticks, wings or breasts)
salt and pepper
1 Tbsp. oil
3 Tbsp. flour
1 and 1/2 tsp. cumin powder
1 tsp. garlic powder
1/2 tsp. oregano
1/2 c. canned tomato (mashed) with juice
3 and 1/2 c. hot water
1/2 tsp. salt
1/8 tsp coarsely ground black pepper

Salt and pepper chicken and brown in hot oil. Remove chicken from skillet. Remove all fat from pan except for 2 and 1/2 Tbsp. Add flour and brown slowly, stirring constantly. Cook 5 minutes and add remaining ingredients. Stir until smooth. Return chicken to pan with gravy and cook over low heat for 40-45 minutes, or until chicken is well done.
