"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
4 Tbs. flour
2 Tbs. mustard
1 cup sugar
1/2 cup cider vinegar
3/4 cup water

Directions:
In a small sauce pan, combine flour and mustard then remaining ingredients. Bring to a boil and cook for 1 minute until mixture becomes very thick. Cool completely; then mix in 2 cups real mayonaise.

Makes enough dressing for 1 pound of macaroni. Also works great in potato salad. Both of these salads taste better if you mix them while macaroni/potatoes are very warm. Refrigerate until cold & enjoy!
