10 medium potatoes, red (about 2 1/2 lbs)
1/2 c buttermilk, warmed
1/2 oz Parmesan cheese, grated (about 3 tbsps)
1/4 c chives, chopped
1 tsp salt
1/8 tsp black pepper, ground

Directions:
Directions:
1. Place potatoes in a large pot and cover with an inch of water; bring to a boil, reduce heat, simmer and cook until fork-tender, about 30 minutes. Drain and return potatoes to pot

2. Mash potatoes with a potatoe masher. Stir in remaining ingredients and mix well to combine. Yield about 2/3 c per servings 2 points

3. Flavor booster: Add the bold flavor of wild mushrooms to mashed potatoes. Soak 1/4 c dried shitake, porcini or black trumpet mushrooms in boiling pot for 10 minutes. Drain well, chop and stir in with the cheese.
