25 lb. pork, 40% fat, small pieces
2 t. sugar
1 t. red pepper flakes
1/2 lb. salt
2 T. pepper
1 T.. sage

Directions:
Directions:
I put my red pepper flakes in a spice grinder and just make them a little smaller. In small bowl, mix together all seasonings. Add to meat and blend. Grind meat mixture and stuff into casings or pattys.
