1 Tb. vegetable oil
1 (16 oz) pkg. smoked sausage, sliced
1 lb. med.-sized uncooked shrimp
1 medium onion sliced thin
2 1/2 cups chicken broth
1 cup Uncle Ben's converted rice, uncooked
1 T. curry powder
1 (4 oz) jar diced pimiento, undrained
1 (9oz) pkg. frozen green peas

Heat oil in a large deep skillet over med. heat and saute sausage and onion for 10 minutes. Remove sausage and onions, leaving drippings in skillet. Add broth to drippings in skillet, stirring to loosen particles from bottom of skillet; bring to boil. Stir in rice and curry powder. Cover; reduce heat and simmer 15 minutes. Stir in sausage, onion, shrimp and pimiento; cook 10 minutes or until shrimp and rice are done. Stir in peas and cover and cook 1-2 minutes more. Makes 6 servings.
