1/4 c whole milk
1/4 c water
1 c flour
1 tsp salt
4 eggs
2 tbsp melted beef fat from roast OR butter
Muffin Tin for 12 muffins

Directions:
Directions:
Preheat oven to 500º

Beat the milk, water, flour, salt & eggs with an electric or rotary mixer until very smooth and bubbly. Set aside for 1/2 hour. Beat again for 1 minute. Put 1/2 tsp of hot beef fat in each muffin tin, heat in very hot oven for 1 - 2 minutes. Remove from oven, put 3 tbsp of batter into each tin. Bake at 500º for 8 minutes, reduce temperature to 400º and bake another 8-10 minutes until risen and golden brown. Serve at once!
