2 c Sugar
8 tbsp butter
2 eggs
2 tsp baking soda
2 c flour
2 tsp cinnamon
1 tsp nutmeg
5 c raw roughly chopped apples, granny smith preferred
1 c walnuts cut small
1 - 2 tsp vanilla

Directions:
Directions:
Preheat oven to 350

Cream sugar and butter, add eggs and beat well. Stir in dry ingredients which have been sifted, add apples, nuts and flavorings. Bake in a heavy bundt pan approximately 50 minutes or until top of cake springs back from touch. Remove from oven and let stand on cake rack to cool for 15 - 20 minutes. Place on a plate and sprinkle with superfine sugar that has been mixed with cinnamon or use powdered sugar if you prefer.
