3 cups cooked mashed sweet potatoes
2 eggs, beaten
1/2 cup sugar
1/2 tsp salt
1 stick margarine, melted, divided
1/2 cup milk
1 1/2 tsp vanilla
1/2 cup brown sugar
1/3 cup flour
1 cup chopped nuts

Directions:
Directions:
Mix sweet potatoes, egg, sugar, salt, 1/2 stick margarine, milk and vanilla together in 1 1/2 quart casserole dish. Combine brown sugar, flour, nuts and remaining margarine; blend well. Distribute evenly over mixture in dish. Bake at 350º for 35 minutes; cool before serving. Or freeze and reheat when ready to use. Yields 8 servings.
