1/4 c. margarine or butter, melted
1/3 c. all-purpose flour
3/4 tsp. salt (optional)
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground black pepper
1 egg, beaten
1/4 c. skim
24 fat-free saltine crackers, finely crushed
3 to 3-1/2 lb. skinless chicken pieces

Directions:
Preheat oven to 375º. Place margarine in 15x10x1" baking pan; set aside. Combine flour and spices. Combine egg and milk in separate bowl. Roll chicken pieces in flour mixture, dip into egg mixture and roll in cracker crumbs. Place coated chicken in baking pan. Bake 30 minutes; turn. Bake an additional 25 to 30 minutes or until golden brown.
