3/4 c. mayo
1/4 tsp. salt
1/4 c. heavy cream, whipped
1 tsp. grated lemon rind
1 tbsp. lemon juice
4 English muffins, split and toasted
butter
cooked ham slices
8 poached eggs

Directions:
Directions:
Mix mayo and salt in a sauce pan. Cook over very low heat for about 3 minutes. Stir in whipped cream, lemon rind and juice. Toast and butter muffins and arrange ham and eggs on each half. Spoon on sauce.
