1lb. med. or hot, roll sasusage
1 c. quick grits
6 to 8 eggs,well beaten
1 1/2 c. milk
salt & pepper to taste
1/4 c. margarine
2 c. grated sharp cheddar cheese,divided

Directions:
Directions:
Stir-fry sausage until cooked and brown. Drain well; set aside.Cook grits in large Dutch oven, according to package directions. Combine eggs, milk, salt and pepper. Slowly stir into grits. Add margarine and 1 1/2 cups cheese,stirring until cheese melts. Add sausage; mix well. Bake in 3-quart round casserole or 9 X 13- Pyrex dish at 350 for 1 to 1 1/2 hours. Sprinkle remaining 1/2 cup cheese on top. return to oven just until cheese melts.
