1 4-5 lb beef brisket - trimmed of fat layer
2 T vegetable oil
1 large onion - coarsely chopped
8 oz of spicy barbecue sauce (K.C. Masterpiece)
1/2 c cider vinegar
salt & pepper to taste

Directions:
Directions:
Season meat with salt & pepper. Heat oil on medium-high in large dutch oven pot and brown brisket on all sides until dark and carmelized, about 15 min. Add onion to pot and saute for until softened, about 5 min. Add vinegar to deglaze the pan. Lower heat to medium-low. Add barbecue sauce. Cover and simmer for 2-3 hours or until meat is falling apart. Fork the meat into shreds and remove the lid and cook to reduce the sauce to a thicker consistency.

Helpful Hint: You can cut the brisket into smaller pieces before browning to speed the cooking time.
