1 egg
1 c. seasoned bread crumbs
1/4 c. chopped onion
1 tsp. salt
1/2 tsp. pepper
1-1/2 lb ground beef
1 c. shredded pepper jack cheese

Directions:
Directions:
Preheat oven to 350º. In large bowl, combine egg, bread crumbs, onion, salt and pepper. Crumble beef over mixture and mix well. Press half of the beef mixture onto the bottom of the pan and halfway up the side of the greased pan 8x4" loaf pan. Sprinkle 3/4 cup cheese over meat to within 1/2 inch of sides. Pat remaining beef mixture over cheese. Bake uncovered at 350º for 50-55 minutes or until no longer pink and the meat thermometer reads 160º. Sprinkle with remaining cheese and bake for 5 minutes. Let stand 10 minutes then serve.
