1 lb ground beef
1/2 c. chopped onion
1 (14 oz) sloppy joe sauce OR green chili canned or homemade OR BBQ sauce
2 tubes (8 oz each) large refrigerated biscuits
1 c. shredded cheddar cheese
1/2 tbsp. crushed red pepper (optional)
Salt and pepper to taste

Preheat oven to 375º. Cook beef with onion and salt and pepper to taste. Drain grease. Stir in sauce and crushed red pepper. Cook over medium heat for 5-10 minutes. Press biscuits into the bottom and up the sides of a greased muffin cups. Spoon 2 tbsp meat mixture into center of each cup. Bake at 375º for 15-17 minutes or until golden brown. Sprinkle with cheese; bake 3 minutes longer or until the cheese is melted.

There are a lot of variations to this recipe. Steve and I really like the BBQ and green chili version. I like to use 505 green chili.
