5 lb. red potatoes
2 c. mayonnaise (we use Miracle Whip)
1 c. sour cream
2 tbsp. water
splash of wine vinegar
2 egg yolks, riced
1/2 c. grated carrots
onion powder
1 green pepper, chopped
chives (optional)
2 egg whites
pepper

Directions:
Directions:
Wash potatoes and cut them into medium pieces. Leave the skins on. Cook until fork tender. Pour onto a cookie sheet and let cool. Salt and pepper and onion powder them. Whisk the dressing ingredients: mayo, sour cream, water, and vinegar. Add the riced egg yolks. Add to potatoes and carrots and egg yolks, and the green pepper. Let chill.
