1 package corn tortillas
2 medium cans whole tomatoes - (cut up)
1 clove garlic - minced,
2 cans Old El Paso chopped green chiles
1 8 oz. tub sour cream
1 lb. Monterrey Jack Cheese (grated)
1 medium onion, chopped
Directions:
Directions:
Saute onion in 2 Tbsp. of Crisco oil. Add garlic, add cans of green chiles, add tomatoes, salt and pepper to taste...Simmer 30 minutes, then pour the mixture into top of a double boiler with water boiling on the bottom.. Add grated cheese a little at a time and stir until melted. Mix in sour cream.

Next, in a hot skillet with hot oil, dip in a a corn tortilla for a count of 3 on each side and put it aside on a plate. Put one spoonful of cheese mixture on top and repeat until you stack 3 or 4 tortillas. End with the cheese mixture on top. Serve with mexican rice.

This is my mom's (Mary Louise) recipe and it is delicious...I think she's made it for most of you so sure hope I got it right!!...Enjoy!!
