3 bone-in chicken breast halves
1 medium onion, chopped
2 cloves garlic, pressed and chopped
1 4-oz. can chopped green chilies
1 8-oz. bag shredded yellow and white cheese
6 small to medium, burrito sized tortillas

Directions:
Directions:
Place chicken, garlic, and onion in a medium saucepan. Cover with water. Bring to a boil, reduce heat to medium-low and let simmer for 45 minutes. Drain broth and remove skin from chicken. Shred chicken in to small pieces. Take 3 tortillas and divide the chicken evenly among them. Layer with as much of the cheese and chilies as desired. Place the last 3 tortillas on top of the chicken and cheese. Spray a griddle or skillet with nonstick cooking spray. Place the quesadillas on the hot griddle/skillet and fry until the tortilla is golden brown. Flip to other side and brown until the cheese has melted. Remove from heat and slice each quesadilla in to quarters. Serve with salsa, sour cream, or guacamole.
