2/3 cup panko (Japanese bread crumbs found in Asian aisle of most grocery stores)
1/2 cup parmesan cheese
2 1/2 TBL marjoram
1 egg
4 skinless chicken breast halves (1 1/2 lbs - I use the thinly sliced)

Olive oil
White wine vinegar

6 cups mixed baby greens

1. Mix panko, parmesan, and marjoram
2. Salt and pepper chicken
3. Brush chicken with egg
4. Coat chicken with mixture
5. Cook over medium-high heat with oil
6. Cool pan, add vinegar
7. Serve over mixed greens with olive oil/vinegar dressing (kids love it without the greens)

Notes: goes great with broccoli cheddar rice
