1 lb Ground Beef
1 c Onion, chopped
1/2 c Green Pepper, chopped
1 clove Garlic, minced
1/4 c Water
1 T Chili Powder
1/4 t Cumin, ground
1 c Rice, cooked
1 can Green Chili Peppers, diced & drained
8 Flour Tortillas
1 c Cheddar Cheese, shredded
1 medium Tomato, chopped
Lettuce, shredded
Taco Sauce
Cheddar Cheese, shredded
Guacamole
Sour Cream

Directions:
Directions:
For filling; in a large skillet cook ground beef, onion, green pepper
and garlic till meat is brown and onion is tender. Drain off fat. Stir
in water, chili powder, and cumin. Cook about 4 minutes or till most of
the water has evaporated. Remove skillet from heat. Stir in rice and
chili peppers.

Stack tortillas and wrap tightly in foil. Heat in a 350° oven for 10
minutes to soften. Spoon a scant 1/2 cup filling onto each tortilla
just below center. Top each with cheese and tomato. Fold bottom edge of
each tortilla up and over filling just till mixture is covered. Fold
opposite sides of each tortilla in, just till they meet. Roll up
tortillas from the bottom. Secure with wooden toothpicks.

Arrange burritos on a baking sheet. Bake in a 350° oven for 10 to 12
minutes or till heated through. Remove toothpicks. Serve burritos on bed
of lettuce topped with sauce, cheddar cheese, guacamole and sour cream.
