1 lb. boneless, skinless chicken breast, cut into palm size pieces
8 oz. (1 c. ketchup)
Butter or regular pam spray
12 oz. diet cola (diet pepsi or coke)

Directions:
Directions:
Heat a skillet and spray with Pam. Once skillet is hot, place chicken in skillet, adding salt and pepper to taste. Brown on both sides (3-4 minutes per side). Combine ketchup and cola. Pour over browned chicken. Cover skillet and turn heat to low. Simmer for 40-45 minutes. Remove cover and turn heat to medium-high. Cook until sauce is thickened.
