1 (5-6 lb.) Beef Tenderloin or 2 small Pork
1 c. Port wine
1 c. soy sauce
1/2 c. olive oil
1 tsp. pepper
1 tsp. dried thyme
1/2 tsp. hot sauce
4 cloves garlic, crushed
1 bay leaf

Directions:
Directions:
Combine all marinade ingredients and mix well. Place tenderloin in a large zip lock or shallow dish and marinade for 24 hours. Let rest for 30 minutes at room temperature before grilling. After grilling to desired doneness, let the meat rest for 25 minutes before cutting.
