4 c. peeled cucumbers, cut into 1/2 inch chunks
4 c. ripe tomatoes, cut in 1/2 inch chunks
1 lg. red or green bell pepper, cut into 1/2 inch chunks
3 tbsp. fresh cilantro, chopped
3 tbsp. fresh mint, chopped
1 c. crumbled or cubed feta cheese
1/2 c. pitted Kalamata olives
2 scallions, cut in 1/4 inch slices
3 tbsp. fresh lemon juice
3 tbsp. extra virgin olive oil
1/2 tsp. salt
1/4 tsp. fresh ground black pepper

Directions:
Directions:
Put vegetables in a large salad bowl and sprinke olives, herbs, and feta cheese evenly over salad. Mix oil and vinegar, salt and pepper in a small bowl and set aside until ready to serve. Pour dressing over vegetables and toss.
