Ingredients: 1 lb fresh green beans or two 9 oz pkg frozen cut green beans 1 T cooking oil 1/2 c thinly sliced onion 1/3 c dry white wine or chicken broth 1/4 to 1/2 tsp salt 1/4 tsp white pepper 1/2 c cashew halves 1/2 c half 7 half or light cream 1/2 c soft bread crumbs

Directions:Cut beans if fresh into 1 inch pieces. Cook fresh or frozen beans in water for 5 minutes. Meanwhile saute' onion til golden brown, Slowly add wine or broth, salt & pepper. Cook for 2 minutes or so. Add 1/4 c cashews & half & half. Bring to a boil, reduce heat & cook uncovered 3 minutes. Stir in beans. Pour mixture into casserole dish top with bread crumbs & remaining cashews. Bake in oven preheated to 350º 25 to 30 minutes or til top browns & heated through. |
