1 small pkg lime Jello
1 c boiling water
1 c apple juice
2 c shredded cabbage
1 medium shredded carrot
1 diced red apple
1-1 1/2 c purple grapes, halved
1 stalk diced celery
1/2 c chopped pecans

Directions:

Dissolve Jello in 1 cup of boiling water. Stir in apple juice. Mix in vegetables and pour into a mold.

Turn out and serve on a lettuce bed.

I cannot ever remember a Thanksgiving dinner without this old standby. I simply love it but, sadly, my children mostly think it is icky. I felt I needed to include it anyway for nostalgic reasons.
