8 oz. Package of Monterey Jack or Pepper Jack cheese - cut into strips 40 Large shrimp - Peeled, deveined and butterflied 20 Slices of bacon - cut in half 40 Toothpicks
Preheat oven to 450 degrees. Place a small piece of cheese into the butterflied opening of each shrimp. Wrap half of a slice of bacon around each one to conceal cheese, secure with a toothpick. Place on a cookie sheet and bake for 10-15 minutes until bacon is browned.
