1 pork roast
1/4 c. butter
1 c. chopped onion
1 c. chopped carrots
1 tsp. paprika
3/4 c. chicken broth
2 tbsp. flour
1/2 c. sour cream
1 tbsp. parsley
1/2 tsp. salt

Directions:
Directions:
Brown roast in butter. Place in pan. Saute onions and carrots in same skillet. Place around roast. Sprinkle with paprika, add broth. Bake covered at 350º for 1 to 1-1/2 hours. Uncover, bake 50 min longer. Remove roast and veggies. Pour pan drippings to measure 1 c., add water to make 2-2/3 c. In sauce pan combine flour and sour cream, add drippings, parsley and salt; boil and cook 2 min. Serve with roast, veggies and potatoes.
