7 lbs cucumbers, sliced
2 cups pickling lime
2 gallons water
8 cups (64 oz) distilled vinegar (5% strength acidity)
8 cups sugar
1 tablespoon salt (pickling salt)
2 teaspoons mixed pickling spices

Directions:
Directions:
Soak cucumbers in water and lime mixture in a glass container or large Tupperware type container for 12 hours or overnight.
Wash 3 times in clean water and soak in fresh ice water for 3 hours or overnight..
Combine remaining ingredients and bring to a low boil. Stir until sugar is dissolved and add cucumbers and soak 5-6 hours or over night.
Boil pickles in soaking liquid for 35 minutes. Fill sterilized quart jars with cucumbers and pour liquid over cucumbers leaving 1/2 inch space. Seal tightly.

My grandmother Jessie Mae Law made these pickles and they have always been one of my favorites. Just the smell of them cooking reminds me of her. Recipe calls for 2 teaspoons of pickling spices and I usually put about 1 1/2 tablespoons. I like the extra spice.
