12 large cucumbers
4 green bell peppers
4 yellow bell peppers
10 medium onions
4 tablespoons salt (Uniodized)
5 cups sugar
5 cups vinegar
3 tablespoons celery seed
6 tablespoons mustard seed
1 jar pimento's

Directions:
Directions:
Slice cucumbers lengthwise and remove seeds. Grind cucumbers, peppers and onions with the coarse blade of a food processor.
Combine remaining ingredients and pour over the cucumber mixture. Bring to a boil and simmer for 20 minutes. Pack in hot jars and seal. Makes 8-12 pints.

This is a great relish to make. Excellent to give as a gift as well. This relish is great for tuna salad, chicken salad or whenever pickled relish is called for. Especially good in deviled eggs. One of my favorite items to can.
