This recipe for Smothered Broccoli, by Stella Roper, is from Roper Family Treasures,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 lb of broccoli florets (frozen or fresh) 1/4 cup chopped onion 2 cloves chopped garlic 1/2 cup of olive oil or vegetable oil Vinegar to taste Salt & pepper to taste
If frozen broccoli is used, thaw and drain. If fresh broccoli is used, you have to steam the broccoli until tender then drain. In skillet, add oil and then heat on medium. Add onion and garlic. Saute for a few minutes. Add broccoli. Cook until smothered. Add vinegar, salt and pepper to taste.
I used to serve this mainly in the winter. All the boys loved this recipe. It's a good one for Thanksgiving.
