Ingredients: 1 c bottled salsa 1 c canned black beans, rinsed and drained 10 6 inch corn tortillias, cut in 1 inch strips 1 c ( 4 oz) shredded reduced fat Mexican blend cheese, divided 1 c low fat sour cream 1 c skim milk 1/2 t salt 2 lg eggs 2 lg egg whites 1/4 c thinly sliced green onion

Directions:Combine salsa and black beans in bowl. Place 1/3 of tortillia strips in a 11x7 baking pan coated with cooking spray. Top with 1/3 c cheese and 1 c salsa mixture. Repeat procedure with 1/3 tortillia strips, 1/3 c cheese and remainimg salsa mixture. Top with remaing tortillia strips. Combine sour cream and next 4 ingredients; stir with whisk. Add onions. Pour over tortillia strips, sprinkle with 1/3 c cheese. Cover and refrigerate 8 hrs or over night. Preheat oven to 350º. Remove dish from refrigerator, let stand at room temp. 10 min. Cover and bake for 20 minutes. Uncover and bake an additional 15 minutes, or until lightly browned. Serve with additional salsa and sour cream! |
