2 c. milk
2 packages dry yeast
1 tsp. sugar
1 c. sugar
1/2 cup (1 stick) sweet unsalted butter
1 egg
2 egg yolks
1 c. golden raisins
1 c. finely chopped walnuts (opt)
2 tsp. salt
1 tsp. nutmeg
1 tsp. grated lemon peel
6 to 7 c. flour
1 egg yolk
2 tbsp. milk

In saucepan, heat milk (105º to 115º). In a bowl, pour 1/4 c. warm milk; stir in yeast along with 1 tsp. sugar. When yeast is dissolved, stir in 1 c. sugar, butter, and remaining milk. Blend in egg and egg yolks, raisins, nuts, salt, nutmeg and lemon peel. Mix in flour to make stiff dough; turn out onto floured surface and knead 10 to 15 minutes till smooth and elastic. Place in buttered bowl; cover and place in warm area and let rise 1 hour or till doubled. Punch dough down and divide into 7 equal portions. Roll each portion into rolls 1 inch in diameter. Braid 4 rolls together for the base. Place braid onto baking sheet. Braid remaining 3 rolls; place on top of the other braid. Gently press braids together. In small bowl, blend egg yolk, 2 tbsp of milk and 1/4 tsp sugar. Preheat oven to 350º. Brush Houska with half of the egg yolk mixture. Cover and let rise 30 minutes or till doubled. Brush with remaining egg yolk mixture. Bake 45 minutes, till golden brown and wooden pick inserted in center comes out clean. Cool slightly. Sprinkle with powdered sugar.
