2 green tomatoes
1 c. fat-free buttermilk (or whole milk)
1/2 c. cornmeal
1/4 c. white flour
1/2 c. vegetable oil

Directions:
Directions:
Slice tomatoes and place in a bowl, cover in milk and allow to stand for 5 minutes or so in the fridge (this reduces the acidity of the tomatoes). Mix flour and cornmeal with any spices you prefer ( I use Herbes de Provence or a basic Cajun seasoning, just for a little flair, but salt, pepper, and garlic are okay too). Take the tomatoes out of the milk and coat with the flour mixture. Heat oil in a medium saucepan over medium-high heat. Fry the tomatoes on each side until they are golden brown (about 2 minutes on each side). Place tomatoes on a plate lined with paper towels to absorb the excess oil. Serve hot (preferably with the pecan trout and grits cooked with milk and chopped pecans).
