1 c long-grain rice
2 c water
1 tsp salt

2 T butter
1/2 c finely chopped onions
1/2 tsp salt
1 c light cream

1/2 lb Monterey Jack cheese, cubed or grated
1 4 oz can green chilli peppers, chopped
1 pt sour cream

Directions:
Directions:
Simmer rice in salted water 20 to 25 minutes.
Melt butter in skillet. Saute onions until transparent. Remove from heat and stir in salt and cream. Set aside. Mix all ingredients together, topping with some cheese. Put in 1 1/2 or 2 qt casserole. Bake in 325 oven 30 minutes or until bubbly-hot.
Can be made and refrigerated until baking time.
