1 1/2 pounds fresh asparagus
2 T white wine vinegar
2 T Dijon mustard
1/2 tsp Worcestershire sauce
1 tsp dried tarragon
1 pinch of sugar
1/3 c olive oil

Directions:
Directions:
To cook asparagus: Fill a large bowl with ice water and set aside. Break off tough ends of asparagus. In a large pan of simmering (not boiling) water, cook asparagus until tender but not limp (approx. 2-3 min) Immediately immerse cooked asparagus in ice water to stop cooking and set color. When cooled, drain on paper towels.
Make sauce by combining ingredients, except oil, in a small bowl. Add oil in a slow, thin stream, whisking constantly, until emulsified.
Arrange asparagus on a serving dish, drizzle with sauce and serve.
