2 T olive oil
4 boneless, skinless chicken breast halves,
1 medium onion chopped
3 cloves of minced garlic
2 cups sliced fresh mushrooms or 1 large can drained.
1 can (10oz) RO-TEL Diced tomatoes and Green Chillies
1/2 cup shredded mozzarella cheese

Directions:
Directions:
In skillet cook chicken in oil till brown. Add onion and garlic, saute until tender about 5 minutes. Add mushrooms and RO-TEL and reduce heat. Cover and simmer 25 min. stirring occasionally until meat is done. Sprinkle with cheese, cover and heat until cheese is melted. Serve with rice. Makes 4 servings.
