4 large bell peppers
1 lb ground beef
1 small onion, chopped
1/2 c. cooked rice
1 c. frozen corn
3/4 tsp. ground cumin
3/4 tsp. dried oregano
2 c. salsa
1 tsp. salt
1/2 tsp. pepper
Sliced jalapeño peppers (optional)

Cut bell peppers lengthwise into halves. Discard the seeds and membranes. Pour boiling water over the peppers in heat-proof bowl. Let stand for 5 minutes, drain. Plunge the green peppers into cold water to stop the cooking process.

Cook the ground beef with the onion in a skillet. Drain the grease. Stir in cooked rice and remaining ingredients. Mound 1/2 cup of mixture into each pepper half. Arrange stuffed peppers in 9x13-inch baking dish. Bake covered at 350º for 40-45 minutes; remove cover. Sprinkle with cheese and place back in the oven for an additional 10-15 minutes. Top with salsa.
