1/2 c butter
1 c sugar
1 egg
2 1/2 c flour
juice and grated rind of 1 lemon
1/2 tsp cream of tarter
dash salt

Directions:
Directions:
Cream butter and sugar until smooth. Add the egg and mix well. Add the juice and grated rind of the lemon then the flour, soda, salt and cream of tarter. Mix to a smooth dough and mold into a roll. Wrap in waxed paper. Store in the refrigerator until form. Slice thin and bake at 375 degrees. These cookies are crunchy and the lemon gives them a delightful tang.
