Spinach Feta Quiche
Ingredients:
1 Pie Crust (frozen is fine)
1 Box Frozen Chopped Spinach
1 Small jar of roasted red peppers
4 oz feta cheese
3 TBS of Romano or Parmesan cheese
3 Large Eggs
pinch of salt
1 cup heavy cream
½ cup milk

Thaw Spinach and drain well
Drain & chop jar of red peppers
Mix eggs with heavy cream, milk and salt
Pour ½ veggies (spinach & red peppers) in pie crust
Crumble ½ of the feta and ½ of the Parmesan cheese over the veggies
Pour the egg mix (eggs, heavy cream, milk) on to the veggies
Add remaining veggies
Add remaining cheese

Bake at 375 degrees for 1 hour to 1-1/4 hours (check at 1 hour) – Bake until blade comes out clean.
