8 cups ground cucumbers (about 5 lbs.)
4 cups ground onions
2 cups ground carrots
5 Tbsp. salt
7 cups sugar
4 cups vinegar
2 tsp. celery seed
1 tsp. ground turmeric
1 tsp. ground nutmeg
1/2 tsp. pepper

Directions:

Combine cucumbers, onions and carrots in a large bowl; sprinkle with salt.

Cover with ice cubes and let stand 6 hours; drain. Rinse and drain thoroughly.

In a large kettle, combine sugar, vinegar, celery seed, turmeric, nutmeg and pepper, add vegetables; bring to a boil over medium heat, stirring often.

Reduce heat; simmer, uncovered, for 20 minutes, stirring occasionally.

Pack hot into hot jars, leaving 1/2" headspace. Adjust caps.

Process 10 minutes in a boiling-water bath. Yield 8 pints.

You can make this "look pretty" by adding a few drops of green food coloring, which will give it more color (this is grandma's hint).
