Crust:
1 c self-rising flour
1/3 c shortening
3-4 T cold water

Filling:
8 oz pkg cream cheese
2 eggs
1/2 c sugar
2 T lemon juice
1 pint fresh strawberries, cleaned and hulled
Glace`:
1/2 c sugar
2 T cornstarch
3/4 c water
1 T lemon juice
1/4 tsp red food coloring

Directions:
Directions:
Crust: mix flour and shortening. Add water gradually tossing lightly with fork until all is just moist enough to hold together. (Will be similar to bisquit mix) Form into a ball, flatten and roll out to 1 1/2" thickness. Lie loosly in pie pan, prick with fork and bake at 450 degrees for 8-10 minutes.
Creamy Filling: Beat softened cream cheese until fluffy. Add eggs, one at a time beating well. Blend in sugar and lemon juice. Mix well and pour into baked pastry shell. Bake at 350 degrees for 15-20 minutes until slightly firm. Cool. Top with strawberries and Glace`.
Glace`: Combine sugar and cornstarch gradually adding water, lemon juice and food coloring. Cook over medium heat until thick and clear. Cool to lukewarm and pour over pie.
